The result is a savory focaccia that’s packed with unique and delicious flavors.
Why This Recipe Is a Game Changer
I’ve always enjoyed experimenting with different flavors in my bread-making adventures. After perfecting my chili oil focaccia, I wondered what it would be like to use ginger scallion oil instead. Though I haven’t quite perfected my own ginger scallion oil yet, I discovered MìLà Ginger Scallion Sauce, which is seriously delicious 😋. This sauce became the star of this focaccia recipe, and the results were outstanding.
Ingredients You’ll Need
- Focaccia Dough: Use your favorite recipe for Easy Overnight Sourdough Focaccia or Easy Yeasted Focaccia.
- Ginger Scallion Sauce Oil: This is the star ingredient. If you don’t have pre-made ginger scallion sauce, you can quickly make your own referencing recipes online or buying a premade sauces like MìLà Ginger Scallion Sauce
- Chopped Scallions: For an extra burst of fresh flavor.
- Toasted Sesame Seeds: To add a nutty crunch.
- Maldon Flaky Sea Salt: For a touch of gourmet saltiness.

Ginger Scallion Oil Focaccia
Equipment
- 10-10.5″ cast iron skillet or equivalent baking dish
Ingredients
- Easy Overnight Sourdough Focaccia or Easy Overnight Yeasted Focaccia
- ginger scallion sauce homemade or store brought like MìLà Ginger Scallion Sauce
- chopped scallions
- toasted sesame seeds
- Maldon flakey sea salt
Instructions
- Follow the recipe for Easy Overnight Sourdough Focaccia or Easy Overnight Yeasted Focaccia for the first rise
- When transferring the dough to your baking pan for shaping and the second rise, instead of using olive oil, drizzle the pan and dough with the oil from the ginger scallion sauce.
- Once the dough has finished proofing, preheat your oven to 425°F (220°C). Scatter the solid pieces of the ginger scallion sauce over the dough. Sprinkle with chopped scallions and dimple the dough with your fingers. Finish by adding toasted sesame seeds and Maldon flaky sea salt on top.
- Bake the focaccia on the middle rack of the oven for 25 minutes, or until it’s golden brown.
