There is a huge tub of cream cheese sitting in my fridge. I can’t stand waste (and there is just so many bagels & cream cheese I can eat!) so I decided to make cookies! I used Tastes of Lizzy T’s recipe with some minor modifications and it came out great! Sharing it here!

Cream Cheese Sugar Cookies

Simple roll-and-slice cream cheese sugar cookies.

Ingredients

  • 100 g unsalted butter
  • 100 g cream cheese
  • 75 g granulated sugar
  • 25 g egg (~half an egg)
  • 1/2 tsp vanilla extract
  • 210 g all purpose flour
  • 1/2 tsp baking powder
  • pinch salt

Instructions

  • Cream together butter, cream cheese and sugar. Add in egg and vanilla extract and mix until light and fluffy.
  • Combine flour, baking powder and salt together. Fold and mix into the butter mixture until a crumbly dough forms. Transfer to plastic wrap and form into a solid log. Wrap and refrigerate overnight or for about 4 hours.
  • Preheat oven to 350F. Slice the cookie log into 1/4 inch pieces and place it on a parchment lined baking tray. Bake for about 15 minutes or until the edges just starts to lightly brown.
