Weekdays are usually too hectic for a real breakfast, so when the weekend rolls around, I love going all out.
Here in Colorado, I’m lucky to have access to some of the best yellow peaches around. Every August, Palisade becomes the spot for peach picking, and I try to make the trip each year—or at least snag a fresh box. While I adore eating them as is, sometimes I like to switch things up by adding them into baked goods or desserts.
This French toast version felt downright luxurious. Unlike the overly sweet versions you often find at restaurants, this homemade recipe strikes the perfect balance. The juicy peaches remain the star, while the almonds bring a subtle crunch. A drizzle of honey ties everything together, and the scoop of ice cream on top adds just the right touch of sweetness, creaminess, and a cool contrast to the warm toast.
It’s a simple way to turn fresh peaches into something special—without losing what makes them so good in the first place.

Peaches & Cream French Toast
Equipment
- mixing bowl
- whisk
- skillet
- spatula
- tea strainer to dust on powder sugar
Ingredients
- 2 slices of day old bread from a rustic loaf (like a sourdough loaf)
- 2 eggs
- 85 g milk
- 1/4 tsp vanilla extract
- 1/8 tsp cinnamon
- pinch nutmeg
- 1 tsp olive oil for cooking
Toppings
- 1/2 yellow peach diced
- 1/2 tbsp brown sugar
- powdered sugar
- toasted almonds
- honey or maple syrup
- vanilla or peach ice cream
Instructions
Prepare the peach topping
- Peel (optional) and dice half a yellow peach. Add it to a bowl with brown sugar to bring out the natural juices and sweeten the peach. Set aside until you are ready to assemble the french toast.
Make the French toast
- Make the custard mixture: Beat together eggs, milk, vanilla, cinnamon and nutmeg until everything is evenly combined. Pour the mixture into a shallow dish large enough to dip the slices of bread in.
- Heat a skillet over medium high heat. Once hot, add oil.
- Dip the day old bread into the custard mixture. Let the excess drip off and place it on the heated pan.
- Cook the toast until the bottom has turn golden brown. Flip, and repeat on the other side. Once both sides are done, transfer it to a plate and repeat the above step with the other slice of toast.
Assemble the French toast
- Top the French toast with the prepared peaches.
- Dust on powdered sugar, sprinkle with the toasted almonds and drizzle honey (or maple syrup).
- Top the French toast with ice cream, serve, and enjoy!
