Peaches & Cream French Toast
Day old bread soaked in a rich custard topped with juicy fresh peaches and a scoop of ice cream for a decadent twist on a breakfast classic.

- 2 slices of day old bread from a rustic loaf (like a sourdough loaf)
- 2 eggs
- 85 g milk
- 1/4 tsp vanilla extract
- 1/8 tsp cinnamon
- pinch nutmeg
- 1 tsp olive oil for cooking
Toppings
- 1/2 yellow peach diced
- 1/2 tbsp brown sugar
- powdered sugar
- toasted almonds
- honey or maple syrup
- vanilla or peach ice cream
Prepare the peach topping
Make the French toast
Make the custard mixture: Beat together eggs, milk, vanilla, cinnamon and nutmeg until everything is evenly combined. Pour the mixture into a shallow dish large enough to dip the slices of bread in.
Heat a skillet over medium high heat. Once hot, add oil.
Dip the day old bread into the custard mixture. Let the excess drip off and place it on the heated pan.
Cook the toast until the bottom has turn golden brown. Flip, and repeat on the other side. Once both sides are done, transfer it to a plate and repeat the above step with the other slice of toast.
Assemble the French toast
Top the French toast with the prepared peaches.
Dust on powdered sugar, sprinkle with the toasted almonds and drizzle honey (or maple syrup).
Top the French toast with ice cream, serve, and enjoy!
