Easy Overnight Sourdough Sandwich Bread

Ingredients

  • 100 g active sourdough starter
  • 220 g water
  • 380 g all purpose flour or bread flour
  • 20 g olive oil
  • 10 g salt
  • 20 g honey or sugar
  • inclusions of your choice optional

Brushing the bread (all optional)

  • eggwash or milk or cream (prebake) or butter (post-bake)

Instructions

  • Combine all the dough ingredients and knead until a smooth dough forms. Cover and let rise for 4-5 hours at a room temp around 75F.
  • Lightly grease a loaf pan and sprinkle with flour.
  • Rolled out the dough into a long rectangle. Sprinkle on fillings (optional) and roll the dough up. Pinch the ends closed and tuck it to the bottom.
  • Transfer dough to the prepared loaf pan, seam side down, cover, and let it rise overnight on the kitchen counter for 10-12 hours.
  • Next day: Preheat the oven to 375F
  • Optional: Brush the top of the loaf with milk or cream, for color. For a glossier finish, brush the top of the yolk with egg wash.
    Bake the loaf in the oven for about 35 minutes or until the top is golden brown.
  • Let cool slightly in the loaf pan before transferring to a wire rack to finish cooling.
    Optional: To get a glossy sheen on the crust (if you did not use egg wash), you can brush the crust with melted butter right after removing it from the oven.
