Honeycomb Peanut Brittle

This variation on the traditional peanut brittle is airy and crunchy, making it a delight to bite into. It boasts sweet and nutty flavors of honey and toffee and is topped with roasted Virginia peanuts for a lovely salty contrast.

Equipment

  • thermometer or temperature gun
  • silicone baking mat or parchment paper

Ingredients

  • 110 g cane sugar
  • 30 g honey
  • 20 g water
  • 1 tsp baking soda
  • 30 g Virginia peanuts

Instructions

  • Line a baking sheet with a silicone baking mat or parchment paper. Sprinkle peanuts all over.
  • Mix together honey, sugar and water in a pot over medium-high heat. Stir and cook the mixture until it reaches 300F and looks golden.
  • Turn off the heat and add in baking soda, quickly mixing to incorporate. The mixture will start foaming and tripling in size. Quickly pour the mixture onto the baking mat over the peanuts. Do not spread the candy.
  • Let the candy cool completely, about 1 hour, before breaking it into pieces.
  • Store in an airtight container and keep away from humidity or about 1-2 weeks.
